Vegan Cajun Red Beans and Rice

Ingredients

  • 2 cans red kidney beans
  • 3 cups cooked brown rice
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 2 cups vegetable broth

Instructions

  1. Sauté onion, bell pepper, and celery until tender.
  2. Add Cajun seasoning and smoked paprika.
  3. Stir in beans and broth.
  4. Simmer 25 minutes, lightly mashing some beans to thicken.
  5. Serve over warm brown rice.
